Light and Bright Smoothie

This is my favorite smoothie right now. It tastes and feels like the perfect blend of summer and fall. As below, it’s Vegan, Gluten Free, and Dairy Free


  • About 1.5 cups baby spinach and 2 small romaine leaves (hit about the 2 cup mark on the blender)

  • 3 oz. soy vanilla yogurt

  • About 2 inches of a cucumber cut in chunks

  • 1/2 banana

  • 3/4 cup frozen mango chunks

  • 1/2 cup apple juice (I've also used coconut water and it's just as tasty!)

  • Squeeze of lemon

  • A couple dashes of nutmeg


  • Blend and serve (these amounts will fill a pint glass)
